Its paratha is as delicious to eat as it is equally beneficial for health. Bathua comes only in winter season.
During the winter season, the local food of Chambal is called Bathua Paratha. Bathua is usually found in fields, which is healthy. It is produced only in the winter season, but by eating it many changes are seen in the body. Most of the people of Chambal also prepare and eat Bathua raita. Also prepare and eat parathas. Doctor Siddharth Chauhan tells that Bathua should be eaten in winter. There is a lot of benefit from this. It strengthens our immune system. It is rich in calcium, potassium, magnesium, iron, manganese, phosphorus, sodium and zinc.
Method to make Bathua Paratha
To make Bathua Paratha, first wash and cut Bathua leaves thoroughly. Now keep water in a pan on low flame to heat. Add Bathua leaves and potatoes in it and keep it to boil. Cover the pan and cook until the leaves become soft. When the leaves are cooked, turn off the gas. Now sift the flour in a deep vessel, add cumin powder, celery, a pinch of asafoetida and salt as per taste and mix everything well. After this, filter the boiled Bathua leaves, take out the water and mix it with flour. After this, mash the boiled potatoes and add them to the mixture and mix well. Then add chopped green chillies and mix everything well. Now knead this dough well, cover it with a cloth and keep it for ten minutes. After this you can make parathas.
